Dear Sara,
Thank you for visiting our blog, and I'm honoured to receive a compliment from the other part of the world. I have heard and read books or blog of cake designers from South America's too.
I believe practise makes perfect, frequent baking and fine tuning is the key. The fresh cream topping is very stable, if it's away from refrigerator, air-conditioned could keep them in shape for a long while, just that they will soften.
Merry Christmas to you Sara!
